Green Pea Pancake

Have you ever tried a Green Pea Pancake? Well let me tell you- it is to DIE for!
While travelling Australia in 2018, my husband and I stopped in at Porch & Parlour for brunch in Bondi Beach. This is where I tried this incredible creation👌We have been making it ever since! I love it because it is a savory option (as opposed to those typical sugary pancakes) and it is packed with good fats, fiber and protein (from the peas). It is also a great breakfast option for those who don’t eat eggs, like me! The toppings are endless and for you to explore. The one you see in the picture is topped with smoked salmon, goat cheese, avocado and shaved zucchini, with a teeny drizzle of maple syrup.
I have kept this a secret for a long time, but it is now time to share it with you all 🙂
Green Pea Pancake2
🌱INGREDIENTS:
• 250 g green peas (defrosted or fresh)
• 1/2 corn flour or arrowroot flour
• 1 flax egg
• 1/4 red onion
• 1 tbsp coconut oil (for frying)
• Salt and pepper
✳mash up all ingredients in a bowl (I use the back of a large fork) and form into pancakes. Lightly fry 2-3 minutes each side✳
 🌱GARNISH
• 1/2 zucchini (shaved ribbon)
• Quarter of avocado
• Handful of mint
• Diced tomato
• Lemon wedge
• 1 tsp Olive oil
