No more skipping meals and relying on caffeine to get you through those busy afternoons and then overindulging late at night!

Introducing MASON JAR SALADS – a quick lunch or dinner option. There are many combinations of ingredients that are perfect to build your mason jar salad. You can work with what you’ve got in your fridge but here is one of my favourite recipes:

Tuna Chickpea Mason Jar Salad
Equipment
- 4 mason jars
Ingredients
- 1/2 cup lemon juice
- 3/4 cup extra virgin olive oil
- 1 tbsp fresh herbs/ italian seasoning basil, oregano, parsley (chopped)
- 2 cups canned chickpeas rinse and drained
- 1/2 cup cucumber chopped
- 1 cup cherry tomatoes halved
- 1/2 cup olives chopped
- 2 cups romaine lettuce or spinach chopped
- 2 cans tuna in water
- salt & pepper to taste
Instructions
- In a small bowl combine the lemon juice, oil, andItalian seasoning /herbs then divide between jars.
- Add the chickpeas and drained tuna to the dressing inthe bottom of the jar.
- Add the cucumber, tomatoes, and red onion to the jarsfollowed by the romaine lettuce
- When ready to eat, shake well and dump into a bowl. Enjoy!
