Chocolate Dipped Protein Cookies ! I finally got around to sharing with you this adapted recipe from the amazing @joyful_health. I love having cookies that make me feel satiated after eating them and as a post workout snack. This is why I have added protein powder to the recipe and added some flax for fiber. I also swapped out the cashew butter with peanut butter and tahini (because that’s what I had in my pantry), but the mix turned out pretty awesome 😊
Cookie ingredients:
- 1/2 cup almond flour
- 1/2 cup protein powder (any you want – but i prefer SunWarrior Vanilla or Iron Vegan Vanilla)
- 1/2 cup peanut butter
- 2 tablespoons of tahini
- ¼ cup flax ground up or whole
- ½ cup maple syrup (see consistency)
Chocolate Dip Ingredients:
- Dark chocolate (approx. half a bar)
- Coconut oil
- Sea Salt
Mix all the dry ingredients together in a bowl. Mix the maple syrup, peanut butter, tahini and flax seeds in another small bowl, then add it to the dry mixture slowly. Make sure that it is well combined and should be a dough-y texture. Roll into 1 -2 inch balls, squish down with the back of a fork 2x to make a fancy design.
Bake at 350 F for approximately 10 -12 minutes.
Chocolate Dip– on a stove top, melt half a dark chocolate bar with 2 tsp of coconut oil until melted. Then tilt the pot to the side and dip each cookie (once COOLED) into the chocolate mixture. Sprinkle sea salt on the chocolate. Put in the fridge under the chocolate hardens.
**TIP: make a double batch and freeze them and take out as needed**
