Mexican Quinoa Salad
Packed with flavor, this salad features colourful veggies, hearty quinoa, and a zesty chilli lime dressing. It's perfect as a side dish for BBQs, a refreshing picnic addition, or a standout at any summer celebration.

- 2 cups quinoa cooked
- 2 bell peppers any colour
- 1 cup black beans
- ½ cup cherry tomatoes
- 1-2 avocados
- 1 mango
- ½ - 1 cup onion (red or white) finely chopped
- ¼ cup fresh cilantro chopped
- ¼ cup pumpkin seeds/pepitas
Chili Lime Dressing:
- ⅓ cup avocado oil
- 2 tbsp white wine vinegar
- 1-2 tbsp lime juice
- ¼ tsp garlic powder
- 1 tsp chili powder
- ½ tsp cumin
- ¼ tsp salt or season to taste
Cook quinoa according to package. While quinoa is cooking, chop peppers, tomatoes, avocado, mango, onion and cilantro, place in a large bowl.
Strain/rinse black beans, add to the bowl with the pumpkin seeds.
Once quinoa is fully cooled, add it to the bowl.
In a mason jar, mix all the dressing ingredients.
When ready to eat, place in a bowl, add dressing and enjoy!
