LENTIL SLAW MASON JARS

I LOVE mason jar salads because they can be prepared in advance, stored for a few days and easy to grab on the go. I’m sure, once you give it a try, it will become a staple!

Servings 2

Ingredients
  

  • 2 tbsp Tahini
  • 3 tbsp Water
  • 1 ½ tsp Extra Virgin Olive Oil
  • 1 tbsp Lemon Juice
  • tsp Sea Salt
  • ½ cup Purple Cabbage chopped
  • ¼ cup Radish sliced thinly
  • cup Lentils cooked
  • ¾ cup Baby Kale
  • ¼ cup  Tomatoes

Instructions
 

  • Combine the tahini, water, olive oil, lemon juice and sea salt in a bowl. Whisk to combine.
  • Add the tahini dressing to the bottom of 2 or 3 mason jars followed by the chopped cabbage, tomato, radish, lentils, and kale. Seal with a lid.
  • When ready to eat, shake well and dump into a bowl.
    Enjoy!

Notes

*add any fresh herb like mint, basil, parsley, cilantro * optional add onion or garlic
