Tuna Chickpea Mason Jar Salad

Equipment

  • 4 mason jars

Ingredients
  

  • 2 cans canned tuna in water drained
  • 1 can chickpeas drained
  • 1/2 cup tomatoes sliced
  • 1/2 cup cucumber sliced
  • 1/4 cup red onion chopped
  • 1-2 cups romain lettuce chopped
  • 1/4 cup extra virgin olive oil
  • 1 tbsp Italian seasoning /herbs
  • 1/2 lemon juiced
  • salt to taste

Instructions
 

  • In a small bowl combine the lemon juice, oil, andItalian seasoning /herbs then divide between jars.
  • Add the chickpeas and drained tuna to the dressing inthe bottom of the jar.
  • Add the cucumber, tomatoes, and red onion to the jarsfollowed by the romaine lettuce
  • When ready to eat, shake well and dump into a bowl. Enjoy!
