Soup is one of my absolute favourite meals during Fall. It’s the ultimate comfort food as soon as the leaves start to turn. So, it’s that time of year when I start to try out different soup recipes… and this is one of the BEST!
One way I love to add protein to veggie / cream-based soup is by swapping the water or stock in the recipe for Organika Bone Broth. This will add at least 25 g of protein to the soup which will keep you fuller and satiated for longer. Plus, there are so many wonderful immune-boosting ingredients like Ginger, Garlic, and Herbs that make this the perfect addition for your Fall menus!
This is a great lunch or dinner soup and can be frozen so is a great soup to batch cook and spread out throughout the week.
Ginger – This powerful ingredient will always be one of my favourites because of its incredible healing properties. Take a look at these amazing benefits:
Garlic – It is a delicious and easy add-on when comes to your diet. You can use it in savoury dishes, soups, sauces, dressings and more. Benefits include:
Herbs – They are a fantastic way to add flavour and colour to any sort of dish or drink while adding a lot of healthy nutrients. Find a couple of your favourite herbs and have them always on hand to make your dishes extra delicious.
Ingredients:
1 small butternut squash, peeled/chopped
Instructions :
1. Add oil to a med/large pot and heat over medium heat
2. Add onion, garlic, ginger, salt, ginger, herbs. Saute until the onion is transparent. 3. Add butternut squash and apple.
4. Add bone broth, coconut cream and stir to combine. (Adjust amt of liquid depending on the size of the squash. The liquid should be just below squash level)
5. Add lid and bring to boil over med heat. Once boiling, turn the heat down to med-low and simmer for about 25 min
6. Remove soup from heat-Puree with a handheld immersion or a blender.
Serve and garnish with fresh herbs and seeds 🙂
